One can even make pal paniyarams with the same batter using coconut milk. Serve these different varieties of paniyarams and capture the hearts of your loved ones. Loaded with shallots and green chillies, these paniyarams tastes best with red chutney.

Ingredients

Instructions

  1. Soak the idli rice, raw rice, urad dal and fenugreek for 3 - 4 hours. Grind to a smooth batter. Add the required amount of salt, mix and ferment overnight.
  2. Heat oil in a kadai. Add mustard seeds and urad dal. Once they sputter add the shallots, chillies and curry leaves and saute.

  3. Take 2 cups of the batter in a bowl. Add this mixture to the batter and mix well.

  4. Mix well, add little water if the batter is too thick. The batter should be of idli batter consistency.

  5. Heat the paniyaram pan ( preferrably non-stick ). Add a few drops of oil in each pit.

  6. Pour the batter in each pit.

  7. Cover and cook for a few minutes on medium flame.

  8. Open the lid and turn each paniyaram carefully to cook evenly on all sides.

  9. Transfer to a plate. Repeat the steps to make the required quantity.

  10. Serve this hot kara paniyaram with red chutney or any other chutney of your choice.
