  1. Peel and cut the plantain into cubes.

  2. Grind garlic and fennel seeds coarsely.
  3. Heat oil in a non-stick fry pan and add the ground paste. Saute for a minute.

  4. Add the plantain cubes and saute.
  5. Add all the powders and salt and mix well. Cover and cook on low heat for a minute.

  6. Open the lid and cook till the pieces are dry. Keep turning the pieces until the pieces are roasted on all the sides.

  7. Transfer to a serving plate.

  8. Serve this hot and crispy vegetable with your favorite rice.
