I had a chance to taste this gravy at my aunt’s place. The color and the taste surprised me. Till then I never had a thought of cooking egg in this style. This egg balls in green gravy tastes best with naans, parathas, rotis and chapathis.

  1. Add the eggs in a bowl.

  2. In a mixer, grind together the coconut, mint leaves, coriander leaves, ginger, garlic and chillies into fine paste.

  3. Add 2 teaspoons of this mix to the eggs along with 1 chopped onion, little salt and mix.

  4. Heat a paniiyaram pan and pour this egg mix into each pit. Cover and cook to make egg balls.

  5. Cook the egg balls on both the sides. Keep them aside.

  6. The egg mix can also be steam cooked and then cut into pieces.

  7. Heat oil in a wok, add cinnamon and cloves.

  8. Add onions and saute. Then add the tomatoes and saute.

  9. Add the chilli powder, garam masala, turmeric powder and salt.

  10. Saute until the tomatoes soften.

  11. Now add the remaining ground paste.

  12. Add water and allow to boil for 5 minutes.

  13. Now add the egg balls.

  14. Bring to a boil and then turn off the flame. Transfer to a serving bowl.

  15. The eggs balls in green gravy is ready to be served with chapathi, naan or parota.
