Christmas is here and it will never be complete without the delicious and moist Christmas Fruit Cake. This is a non-alcoholic recipe and its so easy to bake that you needn’t wait for days to bake this. With just the basic ingredients you can easily bake this at home, as and when required. Here I have not soaked the dried fruits and nuts in alcohol. You can use a wide variety of dried fruits and nuts like the raisins, tutty fruity, prunes, cherries, walnuts, cashew, chopped almonds and so on…

Christmas special fruit cake.

  1. Wash and soak the raisins for 5 - 10 minutes.

  2. You can use different colored tutty fruity, cherries, chopped dates, candied orange peel and also prunes.

  3. In a bowl, boil all the above ingredients in a half a cup of water with 3 tablespoons of sugar. Bring to a boil and switch off. Allow it to cool.

  4. In another thick bottomed pan, caramelize 5 tablespoons of sugar with little water.

  5. Keep stirring the sugar on medium flame.

  6. Continue stirring till the sugar turns brown and begins to boil.

  7. Now add half a cup of water and stir well and then switch off the flame.

  8. Now the caramel is ready. Keep aside and allow it to cool.

  9. Meanwhile, in a wide bowl, beat butter until light and fluffy. Then add the sugar.

  10. Mix the butter and sugar.

  11. Add the eggs, salt and keep mixing.

  12. Now add the vanilla essence, mixed fruit essence and garam masala powder and mix well.

  13. Now slowly add the flour and baking powder mix little by little, and keep mixing.

  14. Mix until you get a smooth batter.

  15. Now add the dried fruits soaked in sugar syrup along with cashew and walnuts and mix.

  16. Now pour in the cooled caramel.

  17. Mix to evenly blend the batter and the caramel.

  18. Now pour the mixture in a greased tin and bake in a preheated oven for 30 - 40 minutes at 180 degree celsius or until done.

  19. A tooth pick which comes out clean when inserted at the center of the cake, ensures that the cake is done. Or you can also know that the cake is baked if it leaves the sides of the tin.

  20. Allow to cool for 5 minutes before demoulding.

  21. Cool on wire rack before slicing.

  22. The moist and delicious Christmas Fruit cake is now ready to be served.

You can also use rum or whisky to soak the dry fruits and nuts. This can be soaked for upto a week for better results. If not using alcohol, the dried fruits and nuts can be soaked in the sugar syrup for a week and then used. This will enhance the flavor of the cake.

      Amy, the cake will last for 3-4 days and upto a week,when refrigerated. Store it in an airtight container while refrigerating. Thank u…

      I guess the caramel would have been hot while you added. Allow the caramel to cool before adding. In this case, you can add a little flour and mix. Then follow the steps as in the recipe. Thank u…
