Chicken Biriyani

This is yet another version of the Chicken Biriyani. Though the basic ingredients are the same the method in which they are added is different. In this version of the Chicken Biriyani, the mint leaves, coriander leaves and green chillies are grinded to a fine paste and then added. My grandma uses a lot of spices and coconut milk and makes this Chicken Biriyani with the seeraga samba rice, which is a very famous variety of rice in South India for Biryani. But here I have used only basmati rice and  the basic ingredients to make this Chicken Biriyani a quick and an easy recipe.

Ingredients

Instructions

  1. Mix chilli powder, coriander powder, salt and turmeric powder with half cup of curd and marinate the chicken for 30 minutes.

  2. In a pressure cooker, heat oil, add cinnamon, cloves, cardamon, bay leaf, star anise and black jeera.

  3. Now add the onions saute. Then add the ginger garlic paste and saute.

  4. Now add the tomatoes with little salt and turmeric powder and saute.

  5. Meanwhile, grind mint leaves, coriander leaves and chillies in a mixer.

  6. Add this ground mix and cook for sometime.

  7. Add garam masala and salt.

  8. Add the chicken marinade and pressure cook for 5 minutes or 1 whistle.

  9. Open and add the remaining curd.

  10. Add one cup of water and allow to boil. Add a few drops of biriyani essence if desired.

  11. Now add the soaked basmati rice.

  12. Cover and cook for 5 minutes or 1 whistle.

  13. Once the pressure subsides, open and add a tablespoon of ghee. Garnish with fresh coriander leaves. Serve this delicious and tasty Chicken Biriyani with onion raitha.
