Payasam is a perfect dessert to end any South Indian meal. This Cashew nut payasam that is thick and creamy will soon be your favorite. Rich in flavors as well as in calories, this payasam is a favorite one for my kids. I first tasted it at my friend’s place and fell in love with it instantly. The addition of carrots makes it even healthier for kids. It can not only be enjoyed as a dessert but also makes a wonderful after school snack.

A rich, creamy and tasty dessert

  1. Soak the 3/4th of the cashew nut in warm water for ten minutes.

  2. Grind it into a smooth paste with a little milk. Keep aside.

  3. Chop the rest of the cashew nuts.

  4. Peel the carrot and boil it. Grind it in a mixer into a smooth paste.

  5. Bring milk to a boil in a large sauce pan. Allow it to reduce to 3/4th of its quantity.

  6. Add the carrot paste and boil.

  7. Now gradually add the cashew nut paste and stir well. The mixture will become thick and creamy once the cashew nut paste is added.

  8. Add the cardamons, chopped cashew nuts and sugar and let the payasam boil for 5 more minutes.

  9. Serve the cashew nut payasam warm or chilled.
