All of us a familiar with different varieties of upside-down cakes and this Banana upside-down cake will top your list once you’ve tasted it. Being in a country which is the largest producer of bananas, its unfair to miss out this lovely fruit in our desserts. I used Nendran banana, which is more firmer, tastier and healthier than other varieties. The soft and spongy cake with a lovely top layer of caramelized bananas will make your loved ones ask for more. You will be surprised how fast the cake gets over once its out of the oven!

With the caramelized banana layer on top, this cake does not need an icing at all.

Ingredients

  1. Preheat the oven to 175 degree centigrade.
  2. Cut the banana in circles and keep aside.

  3. Add butter and brown sugar to the cake tin and heat it on a low flame.

  4. Mix well till the butter and brown sugar blends together. Swirl the tin to cover the base and the sides of the tin.
  5. Now arrange the banana pieces in the cake tin covering the entire base.

  6. Remove from fire and keep aside.
  7. In a dry bowl mix flour, baking powder and sugar together.

  8. In a large bowl, beat the egg till its fluffy.

  9. Add the oil and vanilla essence and beat till the mixture is light.
  10. Now gradually add the flour mixture, one tablespoon at a time and continue to beat.
  11. Add a few teaspoons of milk in between, if the batter becomes too thick. The batter should have a ribbon consistency.
  12. Pour the batter over the prepared tin.

  13. Carefully pour the batter to cover the entire banana layer.

  14. Let the batter spread evenly over the bottom banana layer.

  15. Bake in the oven at 150 degree centigrade for 30 minutes or until a toothpick comes out clean when inserted at the center of the cake.
  16. Remove from the oven and place it on a wire rack.

  17. Let the cake cool for ten minutes.

  18. Turn the cake upside down on a serving plate.
  19. Serve it warm or cold.
